APPETIZER

Smoked salmon poke with avocado, cucumber, small batch oyster sauce, red pepper aioli, furikake, lemon.

MAIN

Truffle butter fish fumet ramen with spicy chili crisp, dashi seafood stock, garlic miso, pan fried bok choy, local braised quail egg, scallions, garlic, and kimchi furikake seasoned white fish.

SWEET

Whole kernel popcorn with aged whiskey caramel sauce, dark chocolate, black truffle flake salt, and Thai tea finishing sugar.

DRINK

Dry Evergreen Grog: spiced rum, white rum, lemon, passion fruit bitters, evergreen simple syrup.
